Bleeding Technique

A large king salmon

The pipette should be trimmed to allow for the size of the fish. Larger fish get more pressure while smaller fish get less pressure. Too much pressure can rupture blood vessels and damage the flesh.

Bleeding

The pipette is inserted into bloodline between the kidney and the backbone.

Finished bleeding

This is a coho with its head on aboard an ice boat. Clear water is flowing from the blood vessels.

This fish is smaller than the king, so less pressure is used.
